1 lb kielbasa, sliced
1/2 red onion, chopped
2 tbsp spicy brown mustard
1 1/2 tbsp white wine vinegar
4 cups chicken broth
1 1/2 lbs red potatoes
3 cups (1/2 pkg) store-bought coleslaw mix
salt and pepper to taste
Stir in the mustard and vinegar; then add chicken broth.
Cut potatoes into 1/2 inch cubes and add to pot, along with the coleslaw mix. Season with salt and pepper.
Bring to a boil, then lower the heat and simmer until the potatoes are tender, 15 to 20 minutes.
This recipe serves 5. Serve with fresh bread. Yummy.
